FAT HEAUXS COOK: CHILI WITH AVOCADO AND LIME
Just this morning I thought chili could only be good if you had lots of cheese and Fritos on top. And corn muffins on the side. Like at least three corn muffins on the side. With lots of butter. But then I took a bunch of chili recipes and mashed them together to make this #Whole30 compliant delight.
You know I'm super lazy and don't really cook or want to clean, so I can assure you this chili was really easy, can be eaten for dayzzzzz, and I was shocked by how good it was. Trust me, it's like 3 degrees outside and you want to make this chili and watch Grey's Anatomy. Trust me.
1 lb ground beef
1 lb Italian sausage
3 cans petite diced tomatoes
1 can tomato sauce
3 tbsp tomato paste
1 cup beef broth
5 minced garlic cloves
1 chopped sweet onion (if you're into that sort of thing)
2 tbsp chili powder
1 1/2 tsp cumin
1 tsp crushed red pepper flakes
1/4 tsp cayenne pepper
1/2 tbsp salt
ground pepper and salt to taste
1. Brown meat on medium heat in skillet. After a couple minutes add minced garlic. Continue until cooked through.
2. Throw meat in crockpot.
3. Add: tomatoes, tomato sauce, tomato paste, beef broth, chili powder, cumin, red pepper flakes, cayenne pepper, salt, and ground pepper / salt to taste
4. Simmer 4-5 hours in crockpot
5. Put in bowls. Squeeze lime juice over the top (you're gonna love this part!). Add diced onions (if you're into onions), avocado, and cilantro.
Voila! You've got dinner, you've got tomorrow's lunch, you've got a clean kitchen and you're toasty warm and full! YOU'RE WELCOME.
